Cooling, Tender Duck Rolls with Crunchy Veggies
Shredded BBQ duck rolls were created in the 1980's to accommodate the custom of teahouses to release new dishes each week. Hong Kong has a subtropical climate characterized by hot, humid weather. In response, dim sum chefs created a cool dim sum appetizer inspired by mung bean sheets with shredded duck, using barbecue flavor and local Hong Kong ingredients for filling.
Shredded BBQ duck rolls highlight the uniqueness of Hong Kong ingredients. It is a refreshing and appetizing dish that almost seems like it could be a part of Shanghai cuisine.
Master Chef's Corner
It is important to find authentic Shanghai pure mung bean flour for making the mung bean sheets. If authentic Shanghai mung bean flour is unavailable, purchase fresh mung bean rinds from a store that sells products from southern China is recommended if it is available in your area.
Ingredients
- 3 cucumbers, cut into thin strips (greenhouse preferred)
Mung Bean Sheets
- 1 ½ cups (375 milliliters) water
- 2 ½ cups (300 grams) Shanghai pure mung bean flour (or potato starch)
- 1 cup (225 milliliters) boiling water
Filling
- 10 ½ ounces (300 grams) shredded BBQ duck
- 1/2 teaspoon (2 grams) salt
- 4 ounces (115 grams) shredded carrots
- 2 preserved eggs (cut into strips)
- 4 ounces (115 grams) shredded celery
- 2 ⅔ ounces (75 grams) shredded pickled ginger
Seasonings
- 5.29 ounces (150 grams) sesame paste
- 6 ½ tablespoons (115 grams) oyster sauce
- 5 ⅓ ounces (150 grams) hoisin sauce
- 1/2 teaspoon five-spice powder
- 10 ½ ounces (300 grams) plum sauce
Cooking Directions
- Put all sauce ingredients together and stir evenly.
- Mix mung bean flour with water. Then add boiling water to form a half-cooked starch syrup.
- Brush a thin layer of oil in a large bowl. Add 2 ⅔ ounces (75 grams) half-cooked starch syrup from step 2. Steam over high heat for approximately 3 minutes. Remove and let cool.
- Mix carrots and shredded celery with 2 heaping teaspoons (9 grams) salt. Wait for the juices to leak out. Remove juices. Add other ingredients and stir evenly.
- Add appropriate amount of filling to one mung bean sheet. Wrap up into a roll. Roll up a thin slice of cucumber. Serve with sauce made in step 1.
