Ginger Tripe
A Crisp, Fresh Tripe Recipe
Ginger and scallion are two popular ingredients in Cantonese cuisine because they add freshness while not detracting from the primary flavor of the dish. Ginger tripe is very simple to make: parboil beef tripe to around medium rare doneness, and then add ginger, scallions, and other seasoning ingredients. Made this way, the beef tripe has a light, fresh taste and a crisp texture.
Tips for Cleaning Beef Tripe
Rub the beef tripe with rock salt. Cut away the tripe's dark membrane and any grit. Rinse with water, then continue to rub with rock salt and vinegar. Rinse again. Finally, rub the tripe with a little bit of rock salt and vinegar once or twice, and wash two more times.

Ingredients
- 1.1 pounds (500 grams) beef tripe
Seasonings
- 0.35 ounce (10 grams) fresh ginger
- 0.52 ounce (15 grams) scallion
- 0.52 ounce (15 grams) carrot
- 0.52 ounce (15 grams) oyster sauce
- 1/2 teaspoon (2 grams) sugar
- 1/2 teaspoon (2 grams) chicken bouillon
- salt to taste

Preparations
- Remove dark membrane from tripe and deodorize (see Tips for Cleaning Beef Tripe below). Wash thoroughly.
- Tip: This step is to ensure that the tripe doesn't affect the dish's texture.
- Cut tripe into strips. Parboil in boiling water. Strain away water and place on plate.
- Tip: Do not parboil the tripe for too long, or it will become too stiff. It only needs to be parboiled for about three seconds before being removed from the water.
- Peel and wash ginger. Shred finely. Wash scallion and carrots, and shred separately.
How to make seasoning juice
- Fry shredded ginger until aromatic. Remove from pan and discard. Bring salt, oyster sauce, sugar, and chicken bouillon to a boil with 1.69 fluid ounce (50 milliliters or 1/5 cup) water, thus creating the seasoning juice. Remove from pan and set aside.
Put it all together
- Place shredded carrots and scallion on top of tripe. Drizzle seasoning juice and a bit of cooking oil on top. Place in steamer basket.
- Add water to steamer pot. After bringing to boil over high heat, add steamer basket and steam for 5 minutes. Serve.
