- 2 ½ cups (300 grams) flour
- 2/3 pound (300 grams) fatty pork
- 2/3 pound (300 grams) lean pork
- 1 ¼ cups (300 milliliters) chicken soup
Seasonings
- ginger as needed/desired
- salt as needed/desired
- sugar as needed/desired
- black pepper as needed/desired
- cooking wine as needed/desired
- sesame oil as needed/desired
- salad oil as needed/desired

Preparations
- Wash and crush the ginger into small pieces. Soak in water and extract as a juice.
How to make potsticker filling
- Cut up the pork, and add chicken soup, ginger, salt, sugar, pepper, cooking wine, and sesame oil. Stir evenly to create the filling mixture.
How to make potsticker skins
- Add warm water to the flour, and stir until a tender, sticky dough is formed. Break apart into smaller ball-shaped pieces, then roll flat to form the dumpling wrapper.
How to assemble potstickers
- Pour the filling mixture onto the dough wrapper. Pinch the dough around the filling to create an enclosed potsticker.
How to properly fry potstickers
- Add oil to a pan and slowly cook the potstickers, occasionally adding more oil and water. Cover and continue to cook until the bottom of the potstickers are golden-brown.
- Tip: Making the chicken soup from an older hen will not only give the potstickers a better flavor, it will also increase their health benefits.
