Cantonese Tofu Buns
A High-Protein Treat
These tofu buns are believed to nourish the stomach, engender liquid, and help increase appetite.
Tofu is high in protein and low in fat. It can help lower blood pressure, blood lipids, and cholesterol, and aid in digestion. When served with ham, it can supplement the center, boost qi, nourish the stomach, and engender liquid. This makes it a great dish for people with small appetites.

Ingredients
- 4 cups (500 grams) flour
- 5.29 ounces (150 grams) tofu
- 1.76 ounces (50 grams) ham
- 1.76 ounces (50 grams) scallions
- 1 egg
Seasonings
- appropriate amount of salt
- appropriate amount of five-spice powder
- appropriate amount of MSG (optional)
- appropriate amount of baking powder
- appropriate amount of yeast
- appropriate amount of sesame oil

Cooking Directions
- Add water, baking powder, and yeast to flour. Mix into dough. Let stand for 20 minutes to soften.
- Boil tofu until cooked. Scoop out of water and dice. Mince ham and scallions. Beat egg.
- Knead dough into a long strip. Press flat. Use rolling pin to press into a thin, rectangular shape.
- Add sesame oil, diced tofu, minced ham, minced scallions, salt, five-spice powder, and MSG to dough. Roll up the dough from the outside to the inside.
- Apply beaten egg to the two ends of the roll. Cut into equal segments. Arrange segments vertically with the cut ends facing upward. Heat in steamer basket. Serve.
Master Chef's Tip
Scald the tofu in salted boiling water. This will prevent it from falling apart during cooking.
