Water Chestnut and Celery Congee
Diet Therapy to Combat Hypertension
Water chestnuts are both tasty and medicinally effective. They are often consumed to fight cancer and lower blood pressure. Celery, on the other hand, is effective at lowering blood pressure and is good for losing weight. It also relieves headaches and dizziness caused by hypertension. Water chestnut and celery congee is a thick, smooth, refreshing congee dish that is also a great diet therapy recipe.

Ingredients
- 1 heaping cup (200 grams) japonica rice
- 7.05 ounces (200 grams) celery
- 5.29 ounces (150 grams) peeled water chestnut
Seasonings
- salt to taste
- chicken bouillon to taste
- sesame oil to taste

Cooking Directions
- Wash celery and chop into segments. Heat a bit of sesame oil in frying pan. Add celery and fry until aromatic. Scoop out of frying pan.
- Wash water chestnut and cut into small, round slices. Blanch in boiling water.
- Wash japonica rice.
- Add japonica rice to pot. Add 8 ½ cups (2,000 milliliter) water and bring to rolling boil. Reduce heat to low and boil to create congee.
- Add celery and bring to boil. Stir in water chestnuts, salt, and chicken bouillon. Serve.
