Lotus leaf can increase appetite, reduce heat, and ease irritation, making it a wonderfully cooling ingredient for the summer months. Winter melon promotes urination, reduces swelling, clears heat, and purifies toxins. It clears heat in the stomach and reduces fever. This congee is very effective for those suffering with high blood pressure, edema, and bloating, as well as helping with weight loss and aiding the complexion.

Do not peel the winter melon before cooking the congee. This way, it will be more effective at reducing heat and swelling.

Ingredients
- 5 ¼ ounces (150 grams) winter melon
- 1/2 cup (100 grams) glutinous rice
- 2 ½ ounces (75 grams) peanuts
- 1 ½ ounces (40 grams) soybeans
- 1 ½ ounces (40 grams) mung beans
- 1 ½ ounces (40 grams) adzuki beans
- 1/2 dried lotus leaf
Seasonings
- crystallized rock sugar, to taste

Cooking Directions
- Wash the glutinous rice, peanuts, soybeans, mung beans, and adzuki beans, and soak them in cold water for 5 hours.
- Wash the dried lotus leaf and cut into pieces. Wash the winter melon, retaining the skin. Remove the pulp and cut into slices.
- Put the peanuts, mung beans, and adzuki beans into a pot. Add water as needed, boil for two hours, then remove.
- Add water as needed to a pot and bring to the boil. Add the winter melon slices, glutinous rice, peanuts, mung beans, soybeans, adzuki beans, and lotus leaf, and boil for 30 minutes.
- Remove the lotus leaf, add crystallized sugar to taste, and serve.
