Sweet Lily Bulbs Congee
A Cure for “Autumn Dryness Disease”
If you experience dryness of the nose and mouth, dehydration, and dry skin, the Cantonese may diagnose you with “autumn dryness disease.” This name came about because its symptoms are caused by the dry air and low humidity typical of the autumn season. One of the best remedies for these common discomforts is a “lung-moistening” congee, such as sweet lily bulbs congee, which will replenish bodily fluids and moisture and happens to have a deliciously sweet flavor.

Sweet lily bulbs congee is useful in combating symptoms of white blood cell deficiency and menopause, such as dryness of the nose and mouth, difficulty breathing, and lack of energy.

Ingredients
- 3.5 ounces (100 grams) fresh lily
- 1/2 cup (100 grams) rice
Seasonings
- crystallized rock sugar, as needed

Cooking Directions
- Wash and rinse the lilies. Separate the flower from the stem, and peel off the petals. Place the petals in boiling water to quick-boil, then remove and soak in a fresh pot of water.
- Wash and rinse the rice, then soak in cold water for 30 minutes.
- Scoop out the rice, and pour the water into a pot, adding more if necessary. Bring to boil, then add in the rice and lilies. Turn to low heat until the rice is fully cooked.
- Add in the crystallized sugar and stir evenly. Continue to cook until the sugar is dissolved.
