Pork Tripe and Chili Pepper Stir-Fry

Ingredients
- 7 ounces (200 grams) pork tripe, pickled in soy sauce
- 3 ½ ounces (100 grams) green chili peppers
- 3 ½ ounces (100 grams) red chili peppers
Seasonings
- coriander, as needed
- salt, as needed
- sugar, as needed
- cooking wine, as needed
- soy sauce, as needed
- vegetable oil, as needed

Cooking Directions
- Cut the pork tripe, green chili peppers, and red chili peppers into thin slices.
- Wash the coriander and cut into thin slices.
- Blanch the pork tripe slices in a pot of boiling water. Remove and allow to drip dry.
- Add oil to a frying pan and bring to heat. Add in the green chili peppers, red chili peppers, and coriander to stir-fry for a short period of time.
- Add cooking wine, soy sauce, salt, sugar, and pork tripe slices. Continue to stir-fry until done.
