Pork Ribs and Century Egg Congee

Pork and century egg congee has a refreshing and smooth taste. According to traditional Chinese medicine, the combination of pork ribs and century eggs, cooked slowly into congee, can replenish yin and fortify the blood as well as quenching the thirst. Ingredients
- 12 ¼ ounces (350 grams) pork ribs
- 1 cup (250 grams) japonica rice
- 1 ¾ ounces (50 grams) peanuts
- 1 century egg
Seasonings
- scallions to taste
- salt to taste

Cooking Directions
- Wash the pork ribs, and after blanching them, place them in a pot, add salt, stir, and leave to marinate.
- Remove the shell of the century egg, wash, and cut into cubes.
- Wash the rice and chop the scallions.
- Add water to a pot as needed. Add the ribs and bring to a boil. Once they are part-cooked, add the rice and peanuts and cook until a congee forms.
- Add the cubed century egg and sprinkle salt to taste. Cook for a little longer, then scatter over chopped scallions and serve.
