Peanut Congee
A Simple Congee with a Wonderful Peanut Taste
Peanuts were thought by the ancients to promote longevity. As a supplement commonly used by the people, peanuts were often used in soups and congee. Peanut congee has few ingredients and is simple to prepare, but it makes for a reliable breakfast choice.
Nutritional Effects
Long-term consumption of peanut congee arouses the spleen, harmonizes the stomach, lubricates and clears the intestines, moistens the lungs, resolves phlegm, nourishes and regulates qi, clears pharyngeal heat, and prevents coughing. It is especially useful for those suffering from vacuity of the spleen and stomach following an illness, heat vexation, and thirst.

Ingredients
- 1.05 ounces (30 grams) peanuts
- 1/2 cup (100 grams) rice
Seasonings
- sugar to taste

Cooking Directions
- Rinse peanuts briefly. Wash rice.
- Place rice in pot. Add peanuts. Add fresh water and the water which you used to soak the peanuts in. Bring to boil over high heat, then reduce heat to low. Boil until rice swells and peanuts soften.
- Add sugar to taste. Serve.
