Oatmeal Congee

Oatmeal congee is sweet, smooth, soft, and glutinous, and can be used to clear the lungs and ease constipation as well as aiding the complexion.

Ingredients
- 1 cup (100 grams) oats
- 2 cups (450 milliliters) milk
- 1 snow pear
- 2 eggs
Seasonings
- cloves to taste
- crystallized rock sugar to taste

Cooking Directions
- Wash and peel the pear, remove the seeds, and cut into small pieces. Add a small amount of crystallized rock sugar. Crack the eggs into a bowl and whisk together.
- Add the appropriate amount of fresh water to a pot, add the cloves, and boil for five minutes, then add the pear pieces.
- Add the oats to a pot with half a cup (150 milliliters) of water to soak. Stir the oats until they form a paste.
- Pour in the appropriate amount of milk and bring to a simmer. Add the eggs, stir, add the crystallized rock sugar, and bring to the boil.
- Add the pieces of pear to the cooked congee and serve.
