Multi-color shrimp congee is a delicious and nutritious. It is also a very popular choice for homemade Cantonese congee. There are two important points to succeed in making the dish.
- You must use fresh shrimp in order to ensure that the final result tastes fresh.
- The shiitake mushrooms must be thoroughly dried after soaking them before adding them to the congee. If the mushrooms are not dry enough, they will not be able to absorb the fresh flavor of the shrimp, and it will take on a coarser texture.

Ingredients
- 1.05 ounces (30 grams) dried shiitake mushrooms
- 1.76 ounces (50 grams) carrots
- 1.76 ounces (50 grams) green peas
- 1.76 ounces (50 grams) corn
- 5.29 ounces (150 grams) shrimp
- 3/4 cup (150 grams) rice
Seasonings
- salt
- ground pepper
- cooking wine
- potato starch

Cooking Directions
- Soak dried shiitake mushrooms in warm water until they soften. Rinse and dice dried shiitake mushrooms. Wash and dice carrots. Wash green peas. Wash corn. Place the above ingredients into boiling water to cook, and then remove from water.
- Extract shrimp meat. Devein shrimp. Wash shrimp. Strain away excess water and place shrimp in bowl. Add cooking wine, ground pepper, salt, and potato starch. Stir evenly. Marinate for 20 minutes.
- Wash rice. Place in clay pot and add appropriate amount of water. Bring to rolling boil over high heat. Add dried shiitake mushrooms (after drying them), diced carrots, green peas, and corn. Reduce heat to low and boil for 1 hour.
- Add shrimp meat. Boil until it is fully cooked (it will change color). Then add salt and ground pepper to taste. Serve.
