Preparing Spoon Worm
One must use a live spoon worm for this dish. The spikes on either end of the spoon worm must be cut off with scissors. The spoon warm’s innards and blood should be removed, and the spoon worm cleaned thoroughly.

Ingredients
- 7.05 ounces (200 grams) congee base
- 2.82 ounces (80 grams) spoon worm
- 1.41 ounces (40 grams) sand shrimp
- 0.7 ounce (20 grams) clam meat
- 1 piece of large conch meat
Seasonings
- 0.35 ounce (10 grams) scallion
- 0.4 cup (100 milliliters) soup stock
- salt to taste
- ground pepper to taste
- salad oil to taste

Cooking Directions
- Remove innards from spoon worm and conch meat. Cut conch meat into thin slices.
- Wash sand shrimp and clam meat. Chop scallion.
- Heat oil in pan. Fry scallion until aromatic. Add sand shrimp and appropriate amount of soup stock.
- When sand shrimp is nearly fully cooked, add conch meat slices, clam meat, and the congee base. Bring to boil.
- Add salt, ground pepper, and spoon worm; bring to boil. Scoop out into bowl. Sprinkle chopped scallions on top. Serve.
