Lotus Seed Congee for a Peaceful Sleep
Congee with white lotus seed is known as an effective insomnia remedy in China. Lotus seed congee is very simple to make. Simply soak lotus seeds until they soften, and then boil it with rice, millet, or glutinous rice. Seed of Job's tears and lily bulbs can be added, and sugar can be used to sweeten the dish to one's taste. But no matter what other ingredients are included, it is imperative that the lotus seeds are boiled to their absolute softest to ensure the best taste.

Ingredients
- 3.52 ounces (100 grams) lotus seeds
- 1/2 cup (100 grams) Japonica rice
- 2.82 ounces (80 grams) lily bulbs
Seasonings
- sugar to taste
Please see measurements in grams to be more exact for all ingredients and seasonings.
Cooking Directions
- Wash lily bulbs. Slice off top and bottom portion of bulbs. Remove petals. Blanch in boiling water briefly and then remove from water. Soak for 1 hour.
- Deshell lotus seeds. Soak for 1 hour.
- Wash japonica rice and soak for 30 min. Remove from water.
- Add water used to soak rice in step 3 to clay pot, and then add additional water as needed. Bring to rolling boil over high heat. Add lotus seeds and japonica rice. Bring to boil over high heat, and then reduce heat to low and continue to boil until rice swells.
- Add lily bulbs and sugar. Continue to boil until congee thickens.
