Although plain congee already has a fresh taste with a smooth texture, pulp from the Longan fruit and wolfberries sweeten the flavor, and the tender lotus seeds and rice add to the appetizing texture of the dish. Ingredients
- 1/3 cup (60 grams) sticky rice
- 1/3 ounce (10 grams) longan pulp
- 2/3 cup (20 grams) lotus seeds
- 1/5 ounce (6 grams) Chinese wolfberries (Goji)
Seasonings
- white sugar to taste
Please see measurements in grams to be more exact for all ingredients and seasonings.
Cooking Directions
- Rinse and dry the sticky rice. Let soak overnight in clean water.
- Rinse and dry the Longan pulp. Wash the lotus seeds, and soak for approximately 3 hours before peeling. Rinse and dry the Chinese wolfberry.
- Bring water to boil in a pot and add the sticky rice and lotus seeds. Turn to low heat and cook for 40 minutes.
- Add in the Longan pulp and cook for an additional 20 minutes. Add in the Chinese wolfberries (Goji) and cook for a few more minutes.
- Finally, add in the sugar and stir.
