In Chinese medicine, ginseng is known to strengthen the body and improve longevity. Chicken meat and chicken liver are filled with iron, they are believed to help fortify the blood and are easily absorbed by the body. This congee has a thick and smooth texture with a fresh flavor. If eaten frequently, it can fortify the blood, strengthen the body and improve the complexion, as well as aiding the internal organs. No wonder it is so popularity among Cantonese people!
Kitchen Tips
Chicken liver cooks easily, so make sure not to leave it too long when blanching. You can soak the chicken liver in salt and milk to remove the smell.

Ingredients
- 1 small chicken (around 20 ounces/550 grams)
- 3/4 cup (150 grams) japonica rice
- 3 ½ ounces (100 grams) chicken liver
- 1/2 ounce (15 grams) Chinese yam
Seasonings
- 1 teaspoon (5 gram) ginseng
- salt as needed

Cooking Directions
- Place the chicken in a pot, add water as needed and boil, then bring to a simmer, creating a broth. Remove the chicken and cut into shreds.
- Blanch the chicken liver in hot water and cut into thin slices.
- Slice the ginseng. Peel the yam, wash, and cut into pieces. Wash the rice.
- Place the ginseng and rice into the broth and heat until the rice is about 60% cooked. Add the yam pieces and cook until the rice forms a congee.
- Add the chicken liver and chicken meat and stir. Add salt to taste and serve.
