Before using in this recipe, be sure to soak the black fungus in water 2~3 times. This will not only help bring out the flavor in the fungus, but also release any dirt or other harmful substances from the fungus.

Ingredients
- 10 ounces (300 grams) congee base
- 1/2 cup (100 grams) spinach
- 3 ounces (75 grams) black fungus (wood ear)
- 1 ounce (25 grams) green onion, chopped
Seasonings (all to taste)
- salt
- chicken stock
- pepper
- vegetable oil

Cooking Directions
- Soak the black fungus (wood ear fungus) in cold water for 6 hours. Remove the roots and tear the remaining section into small pieces.
- Wash the spinach.
- Add oil to a pot and place under high heat. Add the green onions, spinach, and black fungus (wood ear fungus) and stir-fry.
- Add in the congee base and bring to boil.
- Add salt, chicken stock, and pepper to taste.
