Chinese Cucumber Salad with Dried Shrimp

Advice from the Chef
Soaking the dried shrimp in warm water will make it easier to shell and remove any dirt. Be sure to use clean water to wash the shrimp after soaking.

Ingredients
- 10.5 ounces (300 grams) cucumber
- 1.75 ounces (50 grams) dried shrimp
Seasonings
- garlic, as needed
- salt, as needed
- soy sauce, as needed
- vinegar, as needed
- sesame oil, as needed

Cooking Directions
- Wash the cucumber, and cut into slices.
- Soak the dried shrimp in water; mash the garlic into a paste.
- In a small bowl, mix the salt, soy sauce, vinegar, and sesame oil into a dressing.
- Pile the cucumber onto a plate, and place the dried shrimp and garlic paste on top.
- Sprinkle the dressing over top, and serve.
