Properly Preparing Spinach and Mustard Oil
Do not blanch the spinach for too long; it should retain its deep green hue. Also, be careful not to use too much mustard oil.

Ingredients
- 10.5 ounces (300 grams) spinach
- 1.76 ounces (50 grams) carrot
- 1.76 ounces (50 grams) cellophane noodles
Seasonings (all to taste)
- salt
- garlic paste
- rice vinegar
- mustard oil
- soy sauce
- pepper oil
- sesame oil

Cooking Directions
- Remove stems from spinach; wash. Blanch and then run under cold water briefly. Strain away excess water.
- Shred and blanch carrots, then rinse under cold water briefly. Remove excess water.
- Soak cellophane noodles in warm water until soft. Cut into 4-inch-long (10-centimeter) segments. Strain away excess water.
- Place spinach and carrots in salad bowl.
- Stir in salt, garlic paste, rice vinegar, mustard oil, soy sauce, pepper oil, and sesame oil. Serve.
